Two-time James Beard semifinalist Oscar Diaz, executive chef behind Durham, North Carolina-based eateries Little Bull and Aaktun, doesn’t believe in conventionality. His approach to the culinary arts pays homage to the experiences that have led him to where he is today. Diaz’s whimsical yet equally polished culinary style dubbed “Pocho” cuisine, is the matrimonial union of his family’s Mexican heritage, his Chicago roots, his experiences working in several Michelin-starred kitchens out West, and now, the flavors common to his home down South. Each concept spearheaded by Diaz lends itself to his authentic individuality, which is anything but status quo.

Following two James Beard recognitions at the Raleigh-based seafood restaurant Cortez, Diaz made a distinguished entry into the Durham market with the opening of Little Bull in 2023. Building on the eatery’s steadfast momentum and several “best of” acknowledgments, Diaz and long-time business partners Mezcalito Inc., expanded their footprint in 2024 with the opening of Aaktun. The dual café- eatery concept allows Diaz to further explore his culinary creativity through pairings of bold flavors and textures.

Diaz possesses the foundational factors that now play into owning and operating successful businesses. Understanding that every chef has to start somewhere, he welcomes playful culinary exploration through the lens of sustainability behind the scenes. His kitchen is a low-pressure environment where culinary expressiveness flourishes and is visibly apparent through the essence of his menus.

An aspiring DJ in his youth, the concept of “remix culture” took hold in Diaz’s early life and followed him into the culinary world. Though food is his primary creative outlet these days, he still takes advantage of any opportunity to get back to his musical roots when he’s not in the kitchen. A musical aficionado at heart, Diaz carefully curates each restaurant’s playlist and frequents local shows and DJ sets every chance he gets. While much of his time is spent ‘performing’ in the kitchen, the occasional DJ cameo at both Little Bull and Aaktun is never out of the realm of possibility.
